  • 1 lb thinly sliced ribeye steak providing rich flavor and tenderness
  • 1 cup bell peppers, sliced choose your favorite colors
  • 1 cup mushrooms, sliced adds an earthy taste
  • 1/2 medium onion, sliced for sweet, caramelized flavor
  • 4 oz cream cheese, softened for creamy texture
  • 1 cup shredded provolone cheese for melty goodness
  • 2 tbsp olive oil for cooking
  • 1 tsp garlic powder for flavor
  • Salt and pepper to taste
  • 1 tsp Worcestershire sauce (optional) adds depth of flavor
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Step 1: Start by seasoning the ribeye steak slices with salt, pepper, and garlic powder. If you want an extra layer of flavor, add a splash of Worcestershire sauce.
  2. Step 2: Grab a large skillet and heat up the olive oil over medium heat. Toss in the sliced onions, bell peppers, and mushrooms. Sauté for about 5-7 minutes until the veggies are tender and the onions are translucent.
  3. Step 3: Increase the heat to medium-high, and add the seasoned steak slices to the skillet. Cook for an additional 3-5 minutes, stirring frequently, until the steak is cooked to your liking.
  4. Step 4: Reduce the heat to low and add the softened cream cheese to the skillet. Stir until it melts and combines beautifully with the steak and veggies.
  5. Step 5: Preheat your oven to 350°F (175°C). On a clean surface, lay out the delicious steak and vegetable mixture. Place a small amount of shredded provolone cheese on top of the mixture. Roll them up tightly and place seam side down in a greased baking dish.
  6. Step 6: Once all roll-ups are snug in the dish, sprinkle additional provolone cheese on top.
  7. Step 7: Pop the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown.
  8. Step 8: Take them out of the oven and let them cool for a few minutes. Garnish with fresh parsley before diving in!

Notes

If you have any leftovers, store them in an airtight container in the refrigerator for up to 3 days. You can also freeze them before baking. Just thaw and pop them in the oven when you're ready for a quick meal!
