Equipment

  • Donut Pan
  • Large Bowl

Method

  1. Step 1: Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. Step 2: In a large bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
  3. Step 3: In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
  4. Step 4: Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Step 5: Fill each donut cavity about halfway with the batter and bake for 10-12 minutes, or until a toothpick inserted comes out clean. Allow to cool.
  6. Step 6: For the cheesecake filling, beat the softened cream cheese with powdered sugar and vanilla extract until smooth. Gradually add the heavy cream and mix until fluffy.
  7. Step 7: In a bowl, combine sliced strawberries, granulated sugar, and lemon juice. Let sit for about 10 minutes to macerate.
  8. Step 8: To assemble, cut each donut in half horizontally. Spread a layer of cheesecake filling on the bottom half, add some macerated strawberries, and then place the top half back on.
  9. Step 9: For the whipped cream, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
  10. Step 10: Top each assembled donut with a dollop of whipped cream and extra strawberries. Serve immediately.

Notes

Store them in an airtight container in the refrigerator for up to 3 days. For longer storage, you can freeze the assembled donuts without the whipped cream for up to a month. Just thaw and add the whipped cream before serving.
