Ingredients
  

For the Cowboy Butter Lemon Bowtie Chicken
  • 8 oz bowtie pasta
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ cup unsalted butter melted
  • 2 tbsp chopped fresh parsley
  • 1 lemon zest and juice
  • 1 tsp Worcestershire sauce
  • 1 tsp hot sauce optional

Method
 

  1. Step 1: In a large pot of boiling salted water, cook the bowtie pasta according to package instructions. During the last 3 minutes of cooking, add the broccoli florets. Drain and set aside.
  2. Step 2: While the pasta cooks, season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper on both sides.
  3. Step 3: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove from the skillet and let rest for a few minutes before slicing.
  4. Step 4: In a small bowl, combine the melted butter, chopped parsley, lemon zest, lemon juice, Worcestershire sauce, and hot sauce (if using). Mix well.
  5. Step 5: In the skillet used for the chicken, add the cooked pasta and broccoli. Pour the cowboy butter mixture over the pasta and toss to combine.
  6. Step 6: Slice the chicken and serve it on top of the pasta and broccoli. Drizzle any remaining cowboy butter over the chicken and garnish with additional parsley, if desired.

Notes

This dish can be stored in an airtight container in the refrigerator for up to 3 days. If you have leftovers, simply reheat them in the microwave or on the stove, adding a splash of water or broth to keep it moist.
