- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, thyme, and rosemary. Spread them out in a single layer on a baking sheet.
- Step 3: In the same bowl, season the chicken breasts with salt and pepper. Add half of the melted butter and half of the minced garlic to the chicken. Mix to coat the chicken evenly.
- Step 4: Place the baking sheet with the potatoes in the preheated oven. Bake for 20 minutes.
- Step 5: After 20 minutes, remove the baking sheet from the oven. Push the potatoes to one side and place the seasoned chicken breasts on the other side of the baking sheet.
- Step 6: In a small saucepan, melt the remaining butter over medium heat. Add the remaining garlic and sauté for about 1-2 minutes until fragrant. Pour the garlic butter over the chicken.
- Step 7: Return the baking sheet to the oven and bake for an additional 20 minutes, or until the chicken is cooked through and the potatoes are tender.
- Step 8: In the last 10 minutes of baking, add the green beans to the baking sheet, tossing them with the garlic butter and surrounding ingredients.
- Step 9: Once everything is cooked, remove from the oven. Garnish with fresh parsley before serving.
Notes
If you happen to have leftovers, allow the dish to cool completely before storing in an airtight container and refrigerate for up to 3 days.
