Ingredients

Base Ingredients
  • 1 cup plain flour This is the base for our slice, giving it structure.
  • 1 cup rolled oats Adds a lovely chewy texture and heartiness.
  • ½ cup brown sugar For that deep, caramel-like sweetness.
  • ½ cup unsalted butter melted, makes everything rich and delicious.
  • 1 cup wild berry jam The star of the show, bursting with fruity goodness!
  • ½ teaspoon baking powder Helps the slice rise just a bit.
  • ½ teaspoon vanilla extract Adds a warm, aromatic flavor.
  • a pinch salt Balances the sweetness perfectly.

Equipment

  • Oven
  • Square Baking Pan
  • Mixing Bowl

Method

  1. Step 1: Preheat your oven to 180°C (350°F) and grease a square baking pan (about 8x8 inches) or line it with parchment paper.
  2. Step 2: In a large mixing bowl, combine the plain flour, rolled oats, brown sugar, baking powder, and salt. Mix until everything is evenly combined.
  3. Step 3: Pour in the melted butter and vanilla extract. Stir until the mixture takes on a crumbly texture.
  4. Step 4: Press half of the crumb mixture into the bottom of your prepared baking pan to create a nice, even layer.
  5. Step 5: Spread the wild berry jam evenly over the pressed crumb layer.
  6. Step 6: Take the remaining crumb mixture and sprinkle it evenly over the jam layer, pressing it down gently.
  7. Step 7: Bake for about 25-30 minutes, or until the top is golden brown.
  8. Step 8: Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing into squares.
