Ingredients
  

For the Pasta Salad
  • 8 oz elbow macaroni the perfect base for this salad
  • 2 cups corn fresh, frozen, or canned
  • 1 red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup cilantro chopped
  • 1 cup Greek yogurt a creamy and tangy dressing base
  • 1 lime juiced
  • 1 teaspoon chili powder for a hint of warmth
  • 1 teaspoon cumin adds depth and earthiness
  • to taste salt essential seasoning
  • to taste pepper essential seasoning
  • 1/2 cup crumbled feta cheese optional, for extra creaminess
  • 1 avocado diced, optional

Method
 

  1. Step 1: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. Step 2: In a large mixing bowl, combine the corn, diced red bell pepper, red onion, and chopped cilantro.
  3. Step 3: In a separate small bowl, whisk together the Greek yogurt, lime juice, chili powder, cumin, salt, and pepper until smooth.
  4. Step 4: Add the cooled pasta to the bowl with the vegetables. Pour the dressing over the pasta and toss until everything is well combined.
  5. Step 5: If desired, fold in the crumbled feta cheese and diced avocado.
  6. Step 6: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled and enjoy!

Notes

This pasta salad can be stored in an airtight container in the fridge for up to 3 days. Just keep in mind that the longer it sits, the softer the pasta will become.
