Ingredients
  

For the Salad
  • 1 cup quinoa rinsed
  • 2 cups water or vegetable broth
  • 1 can (15 oz) black beans drained and rinsed
  • 1 cup sweet corn fresh, frozen, or canned
  • 1 red bell pepper diced
  • 1/2 red onion finely chopped
  • 1 avocado diced
  • 1/4 cup fresh cilantro chopped
  • 2 limes juice
  • 3 tbsp olive oil
  • 1 tsp cumin
  • Salt and pepper to taste

Method
 

  1. Step 1: In a medium saucepan, combine the rinsed quinoa and water (or vegetable broth). Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed. Once done, remove it from the heat and let it cool.
  2. Step 2: While the quinoa is cooling, grab a large mixing bowl and combine the black beans, sweet corn, diced red bell pepper, chopped red onion, and diced avocado.
  3. Step 3: Once the quinoa has cooled, add it to the mixing bowl with all the other ingredients.
  4. Step 4: In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper. Pour this zesty dressing over the salad.
  5. Step 5: Gently toss all the ingredients together until everything is well mixed.
  6. Step 6: Stir in the chopped cilantro and taste to adjust the seasoning if needed.
  7. Step 7: Serve the salad immediately, or refrigerate it for about 30 minutes to let the flavors meld together. Enjoy!

Notes

This salad can be made a few hours in advance; just keep it chilled until serving. Store any leftovers in an airtight container in the refrigerator. It will stay fresh for up to three days.
