- Step 1: Wear gloves and chop the jalapenos finely, removing stems and optional seeds.
- Step 2: In a large saucepan, combine the chopped jalapenos, apple cider vinegar, and salt. Stir well.
- Step 3: Bring the mixture to a boil over medium-high heat, then reduce and let simmer for 5 minutes.
- Step 4: Stir in sugar and fruit pectin, bring back to a rolling boil, stirring constantly for 1-2 minutes.
- Step 5: To check consistency, place a small amount on a plate to cool. If it holds shape, it's ready.
- Step 6: Pour the hot jalapeno jam into sterilized jars, leaving 1/4 inch headspace. Wipe rims for a good seal.
- Step 7: Seal jars tightly and process in boiling water bath for 5-10 minutes for longer storage.
- Step 8: Allow jars to cool completely at room temperature and store in a cool, dark place.
