- Step 1: In a large saucepan, combine diced pineapple, granulated sugar, apple cider vinegar, turmeric, cayenne pepper, ground ginger, and salt. Stir well to coat all pieces evenly.
- Step 2: Place the saucepan over medium-high heat. Stir frequently to dissolve sugar and prevent sticking as the mixture comes to a boil and turns syrupy.
- Step 3: Reduce heat to low and simmer uncovered for 45 to 60 minutes, stirring occasionally, until the syrup thickens and the pineapple pieces develop a chewy, candied texture.
- Step 4: Remove from heat and let cool for a few minutes to firm up the pineapple pieces slightly.
- Step 5: Using a slotted spoon, transfer pineapple pieces to a wire rack set over a baking sheet to catch drips. Allow to dry for 1 to 2 hours until tacky but not wet.
- Step 6: Roll each sticky pineapple bite in additional granulated sugar to add crunch and prevent sticking.
- Step 7: Place coated bites on parchment paper and let them set completely at room temperature. Store in an airtight container once set.
Notes
Use ripe pineapple for best flavor and texture. Feel free to swap pineapple with mango, papaya, or peaches. Try coconut sugar or brown sugar for a different taste. Add cinnamon or cardamom for extra warmth. These bites can be stored at room temperature for up to 1-2 weeks or frozen for up to 3 months.
