- Step 1: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Step 2: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Step 3: In a rectangular dish, arrange a layer of ladyfinger cookies at the bottom. Spread half of the cream cheese mixture over the layer of ladyfingers.
- Step 4: Evenly distribute half of the mixed fresh berries on top of the cream cheese layer. Place another layer of ladyfingers on top of the berries, followed by the remaining cream cheese mixture and the remaining mixed berries.
- Step 5: Pour the berry sauce over the top layer of berries, allowing it to drizzle down the sides. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Step 6: Before serving, garnish with fresh mint leaves if desired. Cut into squares and enjoy!
