For the Crepes
  • 1 cup all-purpose flour The base for your crepes.

  • 1 tsp vanilla extract A hint of sweetness.
  • 1 tbsp sugar Enhances the flavor of the crepes.
  • A pinch salt Balances the sweetness.
For the Filling
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar Sweetens the cream cheese.
  • 1 tsp vanilla extract Adds more flavor.
  • 1 cup fresh strawberries chopped

Method
 

  1. Step 1: In a large mixing bowl, whisk together the flour, eggs, milk, melted butter, vanilla extract, sugar, and salt until smooth.
  2. Step 2: Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with butter or cooking spray.
  3. Step 3: Pour about ΒΌ cup of the batter into the pan, swirling it to coat the bottom evenly. Cook for 1-2 minutes until the edges start to lift and the surface is set. Flip carefully and cook for another 1-2 minutes on the other side.
  4. Step 4: Remove the crepe from the pan and place it on a plate. Repeat the process with the remaining batter, stacking the crepes as you go.
  5. Step 5: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined. Fold in the chopped strawberries gently.
  6. Step 6: Take one crepe and spread about 2 tablespoons of the cream cheese filling down the center. Roll the crepe tightly, then place it seam-side down on a serving plate. Repeat with the remaining crepes and filling.

Notes

If you have any leftovers, you can store them in an airtight container in the refrigerator for up to 3 days. Just reheat them in a skillet or microwave when you're ready to enjoy again.
