- Step 1: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain and set aside.
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the sliced Italian sausage and cook until browned and cooked through, about 5-7 minutes.
- Step 3: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Step 4: In a small bowl, whisk together the honey, soy sauce, apple cider vinegar, and red pepper flakes (if using). Pour this mixture into the skillet with the sausage.
- Step 5: Add the cherry tomatoes and spinach to the skillet, stirring to combine. Let the mixture simmer for 5 minutes, allowing the flavors to meld together.
- Step 6: Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce. Season with salt and pepper to taste.
- Step 7: Remove from heat and garnish with fresh parsley and grated Parmesan cheese. Serve immediately.
