Ingredients
  

For the Cajun Chicken Rice Skillet
  • 1 lb boneless, skinless chicken breasts diced
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 cup bell peppers diced (any color)
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Step 1: Prepare the chicken by seasoning with Cajun seasoning, salt, and pepper.
  2. Step 2: In a large skillet, heat olive oil over medium heat. Cook the seasoned chicken until golden brown and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Step 3: Sauté diced onion and bell peppers in the same skillet for 3-4 minutes until softened. Add minced garlic and cook for an additional minute.
  4. Step 4: Stir in uncooked rice and let toast for 1-2 minutes.
  5. Step 5: Pour in chicken broth, bring to a boil, reduce heat to low, cover, and let simmer for 15 minutes.
  6. Step 6: Stir in heavy cream and Parmesan cheese, mixing well. Add cooked chicken and frozen peas. Cook for another 5 minutes until heated through.
  7. Step 7: Garnish with fresh parsley and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You may also freeze it for 2-3 months.
