Ingredients
  

For the Spicy Cajun Shrimp
  • 1 lb large shrimp peeled and deveined
  • 2 cups cooked white rice
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 count bell pepper diced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup corn (fresh or frozen)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper adjust to taste
To taste
  • Salt
  • Pepper
For Garnish
  • Fresh parsley chopped
  • Lime wedges

Method
 

  1. Step 1: In a bowl, toss the shrimp with Cajun seasoning, paprika, cayenne pepper, salt, and pepper. Set aside to marinate for about 15 minutes.
  2. Step 2: In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.
  3. Step 3: Stir in the corn and diced tomatoes. Cook for another 3-4 minutes, allowing the mixture to simmer and the flavors to meld together.
  4. Step 4: Push the vegetable mixture to one side of the skillet. Add the shrimp to the empty side and cook for about 2-3 minutes on each side until they turn pink and opaque.
  5. Step 5: Once the shrimp are cooked, mix everything in the skillet together. Serve the shrimp and vegetable mixture over a bed of cooked white rice.
  6. Step 6: Top with chopped fresh parsley and serve with lime wedges on the side.

Notes

This dish is great for meal prep! Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of water to keep it moist.
