- Step 1: In a bowl, toss the shrimp with Cajun seasoning, paprika, cayenne pepper, salt, and pepper. Set aside to marinate for about 15 minutes.
- Step 2: In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.
- Step 3: Stir in the corn and diced tomatoes. Cook for another 3-4 minutes, allowing the mixture to simmer and the flavors to meld together.
- Step 4: Push the vegetable mixture to one side of the skillet. Add the shrimp to the empty side and cook for about 2-3 minutes on each side until they turn pink and opaque.
- Step 5: Once the shrimp are cooked, mix everything in the skillet together. Serve the shrimp and vegetable mixture over a bed of cooked white rice.
- Step 6: Top with chopped fresh parsley and serve with lime wedges on the side.
