Method
 

  1. Step 1: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Step 2: In a mixing bowl, combine the peanut butter, granulated sugar, egg, vanilla extract, baking soda, and salt. Mix until well blended.
  3. Step 3: Using a tablespoon, scoop the dough and roll it into balls. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
  4. Step 4: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  5. Step 5: Remove the cookies from the oven and immediately press a mini Reese's Peanut Butter Cup into the center of each cookie.
  6. Step 6: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
