- Step 1: In a medium bowl, mix together the canned pumpkin puree, sugar, and pumpkin pie spice until well combined. Set aside.
- Step 2: Trim the crusts off the bread slices. Using a rolling pin, flatten each slice of bread.
- Step 3: Place about 1-2 tablespoons of the pumpkin mixture on one end of the bread slice. Roll tightly and seal the edge with a little bit of water.
- Step 4: In a shallow bowl, whisk together the eggs, milk, vanilla extract, and a pinch of salt.
- Step 5: Dip each roll-up into the egg mixture, ensuring it's coated evenly.
- Step 6: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the roll-ups seam side down and cook until golden brown on all sides, about 2-3 minutes per side.
- Step 7: Remove from the skillet and dust with cinnamon sugar. Serve warm with maple syrup.
Notes
These roll-ups can be prepared ahead of time and cooked just before serving. Store leftovers in an airtight container in the fridge for up to 3 days.
