- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: Cut the zucchinis in half lengthwise and scoop out the center to create boats.
- Step 3: Sprinkle the insides of the zucchini boats with salt and pepper.
- Step 4: In a mixing bowl, combine marinara sauce, half of the mozzarella cheese, pepperoni, bell peppers, Italian seasoning, and Parmesan cheese. Mix well.
- Step 5: Spoon the filling mixture evenly into each zucchini boat.
- Step 6: Top with remaining mozzarella cheese.
- Step 7: Bake for about 25-30 minutes until zucchini is tender and cheese is bubbly and golden.
- Step 8: Garnish with fresh basil and serve warm.
Notes
Store leftovers in an airtight container in the fridge for about 3-4 days. Reheat in the oven or microwave.
