Ingredients
  

For the Zucchini Boats
  • 4 medium zucchinis cut in half lengthwise
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pepperoni slices
  • 1/2 cup bell peppers, diced
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper for seasoning
For Garnish
  • Fresh basil

Method
 

  1. Step 1: Preheat the oven to 375°F (190°C).
  2. Step 2: Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  3. Step 3: Sprinkle the insides of the zucchini boats with salt and pepper.
  4. Step 4: In a mixing bowl, combine marinara sauce, half of the mozzarella cheese, pepperoni, bell peppers, Italian seasoning, and Parmesan cheese. Mix well.
  5. Step 5: Spoon the filling mixture evenly into each zucchini boat.
  6. Step 6: Top with remaining mozzarella cheese.
  7. Step 7: Bake for about 25-30 minutes until zucchini is tender and cheese is bubbly and golden.
  8. Step 8: Garnish with fresh basil and serve warm.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. Reheat in the oven or microwave.
