- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a large mixing bowl, combine the sliced peaches with lemon juice and vanilla extract. Toss to coat.
- Step 3: In another bowl, mix together the rolled oats, chopped pecans, brown sugar, flour, cinnamon, nutmeg, and salt.
- Step 4: Pour the melted butter into the oat mixture and stir until everything is well combined and crumbly.
- Step 5: Spread the peach mixture evenly in a greased 9x13 inch baking dish.
- Step 6: Sprinkle the oat and pecan topping evenly over the peaches.
- Step 7: Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the peaches are bubbling.
- Step 8: Remove from the oven and let it cool for a few minutes before serving.
Notes
If you have any leftovers (which is unlikely), you can store them in an airtight container in the refrigerator for up to 3 days. Just reheat in the oven or microwave before serving.
