Ingredients
  

For the Peach Filling
  • 4 cups fresh peaches sliced, about 5-6 medium peaches
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tbsp cornstarch
For the Crisp Topping
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped pecans
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter melted

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, vanilla extract, ground cinnamon, and cornstarch. Toss everything until the peaches are nicely coated. Pour this juicy mixture into a greased 9x13 inch baking dish.
  3. Step 3: In another bowl, mix together the rolled oats, all-purpose flour, brown sugar, chopped pecans, ground cinnamon, and salt. Once combined, pour in the melted butter and stir until you have a crumbly mixture.
  4. Step 4: Evenly distribute the crisp topping over the peach filling in the baking dish.
  5. Step 5: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the peaches are bubbly.
  6. Step 6: Once baked, remove from the oven and let the crisp cool for a few minutes. Enjoy it warm, perhaps with a scoop of vanilla ice cream!

Notes

If you have any leftovers, store them in an airtight container in the fridge for up to 3 days. This dish also freezes well for up to 3 months – just thaw it in the fridge overnight before reheating.
