- Step 1: Preheat your oven to 425°F (220°C). This high temperature will help caramelize the vegetables.
- Step 2: In a large bowl, combine the sliced zucchinis and yellow squashes.
- Step 3: Drizzle the olive oil over the vegetables and toss to coat evenly.
- Step 4: Sprinkle garlic powder, onion powder, dried Italian herbs, salt, and pepper over the vegetables. Toss again until well-seasoned.
- Step 5: Spread the mixture in a single layer on a baking sheet lined with parchment paper.
- Step 6: Roast in the preheated oven for 20-25 minutes, or until tender and slightly browned, stirring halfway through cooking.
- Step 7: Remove from the oven and let cool slightly. Garnish with fresh parsley if desired.
- Step 8: Serve warm as a side dish or enjoy on its own!
