For the Oven Roasted Zucchini and Squash
  • 2 medium zucchinis sliced into rounds
  • 2 medium yellow squashes sliced into rounds
  • 3 tbsp olive oil this helps to bring out the flavors and gives a lovely crispness
  • 1 tsp garlic powder adds a wonderful savory depth
  • 1 tsp onion powder for that extra flavor boost
  • 1 tsp dried Italian herbs or mixed herbs, perfect for a touch of Mediterranean flair
  • to taste salt always essential for seasoning
  • to taste pepper always essential for seasoning
Optional Garnish
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C). This high temperature will help caramelize the vegetables.
  2. Step 2: In a large bowl, combine the sliced zucchinis and yellow squashes.
  3. Step 3: Drizzle the olive oil over the vegetables and toss to coat evenly.
  4. Step 4: Sprinkle garlic powder, onion powder, dried Italian herbs, salt, and pepper over the vegetables. Toss again until well-seasoned.
  5. Step 5: Spread the mixture in a single layer on a baking sheet lined with parchment paper.
  6. Step 6: Roast in the preheated oven for 20-25 minutes, or until tender and slightly browned, stirring halfway through cooking.
  7. Step 7: Remove from the oven and let cool slightly. Garnish with fresh parsley if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave, but be cautious not to overcook.
