- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: Wash the zucchinis and slice them into half-moon shapes, about 1/4 inch thick.
- Step 3: In a large bowl, toss the zucchini slices with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Step 4: Spread the seasoned zucchini in a single layer on a baking sheet lined with parchment paper.
- Step 5: Roast for about 20-25 minutes, or until the zucchini is tender and slightly browned.
- Step 6: If desired, sprinkle the Parmesan over the zucchini during the last 5 minutes of roasting.
- Step 7: Remove from the oven, garnish with fresh parsley if you like, and serve warm.
Notes
Avoid overcrowding the baking sheet for best roasting. Store leftovers in an airtight container for 3-4 days.
