  • 1 lb smoked sausage or kielbasa
  • 4 medium potatoes peeled and chopped into bite-sized pieces; russet or Yukon Gold
  • 1 green bell pepper
  • 1 small onion chopped finely
  • 2 tbsp olive oil for sautéing
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • salt and pepper to taste
  • fresh parsley optional, for garnish

Method
 

  1. Step 1: Preheat a large skillet or heavy-bottomed pot over medium heat and add olive oil. Warm for about 1 minute.
  2. Step 2: Add sliced smoked sausage rounds to the pot. Cook undisturbed for a couple minutes to sear, then stir occasionally for 5–6 minutes until browned all over. Remove sausage with a slotted spoon and set aside.
  3. Step 3: In the same pot, add chopped potatoes, onion, and bell pepper. Sprinkle garlic powder, paprika, salt, and pepper over the veggies. Stir well to coat evenly. Cook for about 10 minutes, stirring occasionally, until potatoes soften slightly and onions become translucent.
  4. Step 4: Return the browned sausage to the pot, stirring into the potatoes and veggies. Cover with a lid, reduce heat to low, and simmer gently for 10–15 minutes until potatoes are tender. Stir occasionally to prevent sticking.
  5. Step 5: Remove from heat once potatoes are fork-tender. Sprinkle fresh parsley on top if desired. Serve hot and enjoy!

Notes

This dish pairs wonderfully with a simple green salad or crusty bread. You can swap sausage types or add vegetables like mushrooms, zucchini, or cherry tomatoes. Store leftovers in an airtight container in the fridge for 3–4 days or freeze for up to 2 months.
