- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: Line a large baking sheet with parchment paper or aluminum foil.
- Step 3: In a large bowl, combine the sliced kielbasa, broccoli, bell peppers, carrots, and red onion.
- Step 4: In a separate bowl, whisk together the honey, soy sauce, olive oil, minced garlic, black pepper, garlic powder, onion powder, thyme, and salt until it's well mixed.
- Step 5: Pour the sauce over the kielbasa and veggies, tossing until everything is well coated.
- Step 6: Spread the kielbasa and veggie mixture evenly on the prepared baking sheet.
- Step 7: Bake in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and the kielbasa is browned.
- Step 8: Remove from the oven, garnish with chopped parsley, and serve warm.
