- Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Step 2: In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Step 3: Mix in the molasses and then add the egg, beating well until fully combined.
- Step 4: In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
- Step 5: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Step 6: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Step 7: Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops slightly crack.
- Step 8: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Step 9: In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- Step 10: Once the cookies are completely cool, spread or pipe a layer of cream filling onto the bottom of one cookie and top it with another cookie to create a sandwich.
