Ingredients

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt

Equipment

  • Large Mixing Bowl
  • Electric Mixer

Method

  1. Step 1: In a large mixing bowl, beat the softened cream cheese and unsalted butter together until smooth and creamy.
  2. Step 2: Gradually add the powdered sugar, mixing on low speed until combined. Increase the speed to medium and beat until fluffy.
  3. Step 3: Add the fresh lemon juice, lemon zest, vanilla extract, and a pinch of salt. Mix until all ingredients are well incorporated and the frosting is light and creamy.
  4. Step 4: Taste the frosting and adjust the lemon juice or zest if a stronger lemon flavor is desired.
  5. Step 5: Use the lemon cream cheese frosting immediately or store it in the refrigerator in an airtight container for up to one week. Before using, allow it to come to room temperature and re-whip if necessary.

Notes

Store any leftover frosting in an airtight container in the refrigerator for up to one week. When you're ready to use it, just let it sit at room temperature for a bit and re-whip if necessary to restore its creamy texture.
