- Step 1: In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, black pepper, and paprika. Mix well to ensure everything is evenly distributed.
- Step 2: In another bowl, whisk together the buttermilk and egg until smooth and well combined.
- Step 3: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the corn kernels and chopped jalapeños.
- Step 4: In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).
- Step 5: Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry in batches for about 3-4 minutes on each side or until golden brown and crispy.
- Step 6: Remove the nuggets from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, pop them in the oven at 375°F (190°C) for a few minutes to get that crispiness back.
