Ingredients

For the Jalapeno Corn Nuggets
  • 1 cup cornmeal This gives our nuggets that wonderful texture.
  • 1 cup all-purpose flour Helps bind everything together.
  • 1 tbsp baking powder For that perfect rise!
  • 1 tsp salt A must for enhancing flavors.
  • 1/2 tsp black pepper Adds a subtle kick.
  • 1/2 tsp paprika For a hint of smokiness.
  • 1 cup buttermilk Makes the nuggets tender and moist.
  • 1 large egg Binds everything nicely.
  • 1 cup corn kernels Fresh or canned, these add sweetness and texture.
  • 1-2 jalapeños jalapeños Finely chopped, adjust to your heat preference!
  • vegetable oil for frying Essential for that crispy finish.

Equipment

  • Large Mixing Bowl
  • Deep Skillet or Frying Pan
  • Slotted Spoon
  • Kitchen Thermometer

Method

  1. Step 1: In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, black pepper, and paprika. Mix well to ensure everything is evenly distributed.
  2. Step 2: In another bowl, whisk together the buttermilk and egg until smooth and well combined.
  3. Step 3: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the corn kernels and chopped jalapeños.
  4. Step 4: In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).
  5. Step 5: Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry in batches for about 3-4 minutes on each side or until golden brown and crispy.
  6. Step 6: Remove the nuggets from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  7. Step 7: Enjoy your jalapeno corn nuggets warm, with your favorite dipping sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, pop them in the oven at 375°F (190°C) for a few minutes to get that crispiness back.
