For the Honey Pineapple Salmon
  • 4 fillets salmon fresh
  • 1 cup fresh pineapple diced
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp ginger grated
For Serving
  • Fresh cilantro or parsley
  • Lime wedges

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a medium bowl, combine honey, soy sauce, olive oil, minced garlic, and grated ginger. Mix well.
  3. Step 3: Place the salmon fillets in a baking dish. Season with salt and pepper, then pour half of the marinade over the salmon. Let them marinate for about 15-20 minutes.
  4. Step 4: Scatter diced pineapple around the salmon and drizzle remaining marinade over the top.
  5. Step 5: Bake for about 15-20 minutes, or until the salmon flakes easily with a fork.
  6. Step 6: Garnish with fresh cilantro or parsley and serve with lime wedges.
