Method
 

  1. Step 1: In a bowl, whisk together honey, lime juice, olive oil, garlic powder, cumin, salt, and pepper. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
  2. Step 2: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for a few minutes before slicing.
  3. Step 3: In a large bowl, combine the cooked rice, diced avocado, cherry tomatoes, red onion, and cilantro. Gently toss to combine.
  4. Step 4: On a plate, layer the rice mixture, then add a layer of sliced chicken on top. You can stack them higher with additional layers if desired.
