  • 1 lb smoked sausage sliced
  • 2 medium sweet potatoes peeled and cubed
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste
For garnish
  • Fresh parsley

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, smoked paprika, salt, and pepper until well combined.
  3. Step 3: On a large sheet pan, combine the sliced sausage, cubed sweet potatoes, broccoli florets, and red bell pepper. Drizzle the sauce over the top and toss everything until well coated.
  4. Step 4: Spread the mixture out in an even layer on the sheet pan. Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and the sausage is heated through.
  5. Step 5: Remove from the oven and sprinkle with fresh parsley. Serve warm and enjoy!
