Ingredients

  • 4 cups Cucumbers sliced
  • 2 Habanero Peppers sliced
  • 4 cloves Garlic peeled and smashed
  • 2 cups Distilled White Vinegar
  • 1 cup Water
  • 1/4 cup Sugar
  • 1 tablespoon Salt
  • 1 tablespoon Pickling Spices (optional)
  • 1 teaspoon Black Peppercorns

Equipment

  • Canning Jars
  • Saucepan
  • Boiling Water Bath

Method

  1. Step 1: Sterilize your canning jars and lids by boiling them in water for 10 minutes. Let them dry completely.
  2. Step 2: In each sterilized jar, layer the cucumber slices, sliced habanero peppers, and smashed garlic cloves. Leave some space at the top of the jar.
  3. Step 3: In a saucepan, combine the distilled white vinegar, water, sugar, salt, pickling spices, and black peppercorns. Heat over medium heat, stirring until the sugar and salt are dissolved. Bring to a simmer.
  4. Step 4: Carefully pour the hot brine over the packed cucumbers, ensuring they are fully submerged. Leave about 1/2 inch of headspace at the top of each jar.
  5. Step 5: Wipe the rims of the jars with a clean cloth to remove any residue. Place the sterilized lids on top and screw on the metal bands until they are fingertip-tight.
  6. Step 6: If you plan to store the pickles for a long time, process the jars in a boiling water bath for 10 minutes. If you want to refrigerate them and consume them within a few weeks, you can skip this step.
  7. Step 7: Allow the jars to cool completely at room temperature. Once cooled, store them in the refrigerator or in a cool, dark place if processed.
  8. Step 8: For the best flavor, let the pickles sit for at least 48 hours before eating. The flavors will intensify over time.

Notes

For the best flavor, wait a full week before diving in; the longer they sit, the better they taste!
