- Step 1: In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar until well combined.
- Step 2: In another bowl, beat the eggs, then stir in the milk and vanilla extract until smooth.
- Step 3: Gradually add the wet ingredients to the dry ingredients, mixing until the batter is smooth and well combined. It should be thick but pourable.
- Step 4: Heat oil in a deep frying pan or pot over medium-high heat. The oil should be about 2 inches deep and heated to 375°F (190°C).
- Step 5: Once the oil is hot, carefully pour the batter into the oil in a circular motion, creating a spiral shape.
- Step 6: Fry for about 2-3 minutes on each side until golden brown. Use tongs to carefully flip the funnel cake.
- Step 7: Once cooked, remove the funnel cake from the oil and place it on paper towels to drain excess oil.
- Step 8: Dust generously with powdered sugar before serving. Enjoy your homemade delight!
Notes
While funnel cakes are best enjoyed fresh, you can store leftovers in an airtight container for up to two days. To reheat, pop them in the toaster oven for a few minutes to regain that crispiness.
