Method
- Step 1: Tear off large sheets of aluminum foil (about 12x12 inches). You will need enough sheets for each serving.
- Step 2: In a large bowl, combine the ground beef, halved baby potatoes, mixed vegetables, chopped onion, minced garlic, olive oil, salt, pepper, paprika, and Italian seasoning. Mix until all ingredients are well combined.
- Step 3: Place a generous portion of the mixture in the center of each sheet of foil. Fold the sides of the foil over the mixture, then roll up the ends to seal the packets tightly.
- Step 4: Preheat your grill or oven to 400°F (200°C). Place the foil packets directly on the grill or on a baking sheet if using the oven. Cook for 25-30 minutes, or until the meat is cooked through and the potatoes are tender.
- Step 5: Carefully open the foil packets (watch out for steam) and serve hot. You can enjoy them straight from the foil or transfer to a plate.
Notes
If you happen to have leftovers, store them in an airtight container in the refrigerator. They should be good for up to three days. You can reheat them in the oven or microwave, but I recommend using the oven to keep that lovely texture intact.
