  • 1/2 teaspoon baking soda another leavening agent for a light texture.
  • 1/4 teaspoon salt enhances all the flavors.
  • 1/2 cup unsalted butter softened, brings richness and moisture.
  • 2 large eggs bind everything together and add fluffiness.
  • 1 teaspoon vanilla extract for a warm, inviting flavor.
  • 1 cup crushed pineapple drained, the star of the show!
  • 1/2 cup shredded coconut adds tropical texture and flavor.
  • 1/2 cup chopped walnuts optional, for a delightful crunch.
For the Frosting
  • 1 cup powdered sugar for frosting, sweet and smooth.
  • 2 tablespoons milk for frosting, helps create the right consistency.
  • 1 teaspoon vanilla extract for frosting, adds depth to the frosting.

Equipment

  • 9-inch round cake pan
  • Mixing Bowl
  • Electric Mixer
  • Spatula
  • Wire rack

Method

  1. Step 1: Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. Step 2: In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Give it a good mix.
  3. Step 3: Add the softened butter, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed until smooth and well combined.
  4. Step 4: Fold in the crushed pineapple, shredded coconut, and chopped walnuts (if using). Make sure everything is evenly distributed.
  5. Step 5: Pour the batter into your prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Step 6: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. Step 7: While the cake cools, prepare the frosting by mixing the powdered sugar, milk, and vanilla extract in a separate bowl until smooth.
  8. Step 8: Once the cake is completely cooled, spread the frosting evenly over the top. Slice it up and get ready for a taste of paradise!
