Method
- Step 1: Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
- Step 2: In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Give it a good mix.
- Step 3: Add the softened butter, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed until smooth and well combined.
- Step 4: Fold in the crushed pineapple, shredded coconut, and chopped walnuts (if using). Make sure everything is evenly distributed.
- Step 5: Pour the batter into your prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Step 6: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Step 7: While the cake cools, prepare the frosting by mixing the powdered sugar, milk, and vanilla extract in a separate bowl until smooth.
- Step 8: Once the cake is completely cooled, spread the frosting evenly over the top. Slice it up and get ready for a taste of paradise!
Notes
To keep your cake fresh, store it in an airtight container at room temperature for up to 3 days. If you want to keep it longer, refrigerate it for about a week.
