Ingredients
  

For the Pasta Salad
  • 8 oz whole wheat pasta fusilli or penne
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 ea red bell pepper diced
  • 1 ea red onion finely chopped
  • 1 cup cherry tomatoes halved
  • 1 ea avocado diced
  • 1/4 cup cilantro chopped
  • 1 ea lime juiced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Crumbled feta cheese (optional)

Method
 

  1. Step 1: In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. Step 2: While the pasta is cooking, prepare the vegetables. In a large mixing bowl, combine the corn, diced red bell pepper, chopped red onion, halved cherry tomatoes, and diced avocado.
  3. Step 3: In a small bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper.
  4. Step 4: Add the cooled pasta to the vegetable mixture. Pour the dressing over the pasta and toss gently to combine.
  5. Step 5: Stir in the chopped cilantro and toss again.
