Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Step 2: In a large bowl, beat the softened butter and granulated sugar together with an electric mixer until light and fluffy, about 2-3 minutes.
  3. Step 3: Add the egg and vanilla or almond extract to the bowl and mix until fully combined.
  4. Step 4: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Step 5: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Step 6: Fold in the cotton candy powder, quinine powder, and tonic water until the dough is evenly blended.
  7. Step 7: Shape the dough into balls or use cookie cutters for fun shapes and place them evenly spaced on the prepared baking sheet.
  8. Step 8: Bake for 10-12 minutes or until edges turn golden brown. The centers may look soft but will firm as they cool.
  9. Step 9: Let the cookies cool completely on a wire rack. For best glow, view in a dark room or use a UV flashlight.

Notes

Softened butter is key for texture. Don’t overmix dough after adding flour. Use fresh baking powder for best rise. Chilling dough is optional but helps with shape. Store cookies airtight at room temperature up to 5 days or refrigerate up to 10 days. Freeze unbaked dough balls for up to 3 months. The glow is strongest when freshly baked and best viewed in the dark.
