- Step 1: Season the chicken breasts with salt and pepper on both sides.
- Step 2: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 15-20 minutes. Add the minced garlic and thyme, cooking for an additional minute until fragrant.
- Step 3: Pour in the beef broth, scraping the bottom of the skillet to deglaze it. Bring the mixture to a simmer and let it cook for another 5 minutes.
- Step 4: Push the caramelized onions to the side of the skillet and add the seasoned chicken breasts. Cook the chicken for about 6-7 minutes on each side, or until it’s cooked through.
- Step 5: Once the chicken is cooked, sprinkle the shredded Swiss cheese over the top. Cover the skillet and let it cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
- Step 6: Remove from heat and garnish with chopped fresh parsley. Serve the chicken with the caramelized onions and sauce on top.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave or on the stovetop.
