  • 5 large potatoes peeled and diced
  • 1 cup mayonnaise for creamy base
  • 2 tbsp Dijon mustard adds tang
  • 1 tbsp apple cider vinegar for brightness

  • 0.5 tsp black pepper for a gentle kick
  • 1 cup celery diced
  • 1 cup red onion diced
  • 4 large hard-boiled eggs chopped

Method
 

  1. Step 1: Place the diced potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat and cook until tender, about 10-15 minutes. Drain and let cool.
  2. Step 2: In a large bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper until well combined.
  3. Step 3: Once the potatoes have cooled, gently fold them into the bowl with the dressing. Add the diced celery, red onion, chopped hard-boiled eggs, and sweet pickle relish. Stir carefully to combine.
  4. Step 4: Cover the potato salad and refrigerate for at least 1 hour to allow flavors to meld.
