- Step 1: In a large skillet, heat the olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5 minutes.
- Step 2: Add the diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 3-4 minutes.
- Step 3: Pour in the chicken broth and bring to a boil. Stir in the tortellini and cook according to package instructions until tender.
- Step 4: Reduce the heat to low and stir in the heavy cream, chopped spinach, and Italian seasoning. Cook until the spinach is wilted and the mixture is heated through.
- Step 5: Season with salt and pepper to taste. Serve warm, topped with grated Parmesan cheese.
Notes
You can store any leftovers in an airtight container in the fridge for up to 3 days. Just reheat gently in the skillet or microwave, adding a splash of broth if it looks a little thick.
