Easy Hamburger & Potato Casserole

Ingredients
  

For the Casserole
  • 1 lb ground beef the hearty base of this casserole
  • 1 medium onion chopped
  • 3 cups potatoes thinly sliced
  • 1 can cream of mushroom soup 10.5 oz
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • to taste salt
  • to taste pepper
  • 1 cup frozen mixed vegetables optional

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
  3. Step 3: In a large mixing bowl, combine the cream of mushroom soup and milk. Mix well until smooth.
  4. Step 4: In a greased 9x13 inch baking dish, layer half of the sliced potatoes at the bottom.
  5. Step 5: Spread the cooked ground beef and onion mixture evenly over the potatoes.
  6. Step 6: If using, sprinkle the frozen mixed vegetables over the beef layer.
  7. Step 7: Pour half of the soup mixture over the beef and vegetable layer.
  8. Step 8: Add the remaining sliced potatoes on top and pour the rest of the soup mixture over everything.
  9. Step 9: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  10. Step 10: Remove the foil, sprinkle the shredded cheddar cheese on top, and return to the oven for an additional 15 minutes, or until melted and bubbly.
  11. Step 11: Let the casserole cool for a few minutes before serving.

Notes

This casserole is great for leftovers and can be stored in an airtight container in the fridge for up to 3 days.
