Ingredients
  

For the Casserole
  • 2 cups cooked, shredded chicken leftover or rotisserie chicken
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables optional
  • 2 cups cooked rice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1 cup crushed cornflakes for topping
  • 2 tablespoons melted butter for topping

  • 9x13-inch Baking Dish

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, cheddar cheese, mixed vegetables (if using), cooked rice, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  3. Step 3: Transfer the mixture into a greased 9x13-inch baking dish and spread it evenly.
  4. Step 4: In a small bowl, mix the crushed cornflakes with melted butter. Sprinkle the mixture evenly over the top of the casserole.
  5. Step 5: Bake in the preheated oven for 30-35 minutes, or until the casserole is hot and bubbling and the topping is golden brown.
  6. Step 6: Remove from the oven and let cool for a few minutes before serving.

Notes

Leftovers can be stored in the fridge for up to 3-4 days or frozen for up to 2 months.
