- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a 9-inch round cake pan, melt 1/4 cup of butter over low heat. Add the brown sugar and stir until dissolved. Remove from heat and stir in 1 teaspoon of vanilla extract. Arrange the peach slices evenly over the mixture in the pan.
- Step 3: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. In another bowl, cream the softened butter until light and fluffy. Add the eggs, 1 teaspoon of vanilla extract, and buttermilk, and mix until well combined.
- Step 4: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
- Step 5: Carefully pour the cake batter over the arranged peaches in the pan, spreading it evenly.
- Step 6: Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Step 7: Allow the cake to cool in the pan for about 10 minutes. Carefully invert the cake onto a serving plate while still warm, so the peaches are on top. Serve warm or at room temperature.
Notes
To store your cake, cover it tightly with plastic wrap or aluminum foil. It will stay fresh at room temperature for 2-3 days. If you want to keep it longer, you can refrigerate it for up to a week.
