Ingredients
  

For the Stuffed Salmon
  • 4 fillets salmon skin on
  • 2 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup cream cheese softened
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper
  • 1/2 tsp red pepper flakes optional
  • Fresh herbs

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a medium bowl, combine spinach, feta cheese, cream cheese, minced garlic, olive oil, lemon juice, salt, pepper, and red pepper flakes. Mix until well combined and set aside.
  3. Step 3: Pat the salmon fillets dry and cut a pocket into each fillet.
  4. Step 4: Stuff each salmon pocket generously with the spinach and feta mixture.
  5. Step 5: Sear the stuffed salmon fillets in an oven-safe skillet with olive oil over medium-high heat for 3-4 minutes until the skin is crispy.
  6. Step 6: Transfer the skillet to the preheated oven and bake for 8-10 minutes until cooked through.
  7. Step 7: Remove from the oven, let rest, garnish with fresh herbs, and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over low heat.
