- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: In a medium bowl, combine spinach, feta cheese, cream cheese, minced garlic, olive oil, lemon juice, salt, pepper, and red pepper flakes. Mix until well combined and set aside.
- Step 3: Pat the salmon fillets dry and cut a pocket into each fillet.
- Step 4: Stuff each salmon pocket generously with the spinach and feta mixture.
- Step 5: Sear the stuffed salmon fillets in an oven-safe skillet with olive oil over medium-high heat for 3-4 minutes until the skin is crispy.
- Step 6: Transfer the skillet to the preheated oven and bake for 8-10 minutes until cooked through.
- Step 7: Remove from the oven, let rest, garnish with fresh herbs, and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over low heat.
