- Step 1: In a bowl, combine the chicken breasts and buttermilk. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Step 2: In a shallow dish, mix together the flour, garlic powder, onion powder, paprika, cayenne pepper (if using), salt, and pepper.
- Step 3: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing lightly to adhere.
- Step 4: In a large skillet, heat about 1 inch of vegetable oil over medium-high heat until hot but not smoking.
- Step 5: Carefully add the chicken to the hot oil, cooking in batches if necessary. Fry for about 6-7 minutes on each side, or until golden brown and fully cooked.
- Step 6: Remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.
- Step 7: Toast the burger buns lightly. Spread mayonnaise on the bottom half of each bun. Add a piece of crispy chicken, followed by lettuce, tomato slices, and pickles. Top with the other half of the bun.
- Step 8: Enjoy your crispy chicken sandwich hot and fresh!
