- Step 1: Peel and cut the potatoes into uniform chunks. Rinse them under cold water to remove excess starch.
- Step 2: Place the potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over medium-high heat and cook until fork-tender, about 15-20 minutes.
- Step 3: Drain the potatoes and return them to the pot. Add the butter and milk. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm while you prepare the shrimp.
- Step 4: In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp from the skillet and set aside.
- Step 5: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Step 6: Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan. Add the heavy cream and red pepper flakes, if using. Stir and let simmer for about 2-3 minutes until slightly thickened.
- Step 7: Return the cooked shrimp to the skillet. Toss to coat the shrimp in the creamy sauce. Season with salt and pepper to taste.
- Step 8: Spoon a generous portion of mashed potatoes onto each plate. Top with the creamy garlic shrimp and sauce. Sprinkle with chopped fresh parsley before serving to add a touch of color.
Notes
If you have leftovers, store in an airtight container in the fridge for up to 3 days. Reheat gently on the stove over low heat; add a splash of chicken broth or milk to revive the creaminess.
