Ingredients
  

For the Mashed Potatoes
  • 2 lb potatoes peeled and quartered
  • 0.5 cup milk
  • 0.25 cup butter
For the Creamy Garlic Shrimp
  • 1 lb large shrimp peeled and deveined
  • 4 cloves garlic minced
  • 0.5 cup heavy cream
  • 0.5 cup chicken broth
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Step 1: Place the quartered potatoes in a large pot and cover them with water. Don't forget to add a pinch of salt.
  2. Step 2: Bring it to a boil over medium-high heat, then reduce to a simmer. Cook until the potatoes are tender, about 15-20 minutes.
  3. Step 3: Drain the potatoes and return them to the pot. Add in the milk, butter, salt, and pepper. Mash the potatoes until smooth and creamy. Keep them warm while you prepare the shrimp.
  4. Step 4: In a large skillet, heat the olive oil and butter over medium heat.
  5. Step 5: Add the minced garlic and sauté for about 1 minute until fragrant, but be careful not to burn it!
  6. Step 6: Add the shrimp to the skillet, seasoning with paprika, salt, and pepper. Cook for 2-3 minutes on each side until the shrimp turns pink and is cooked through.
  7. Step 7: Pour in the chicken broth and bring it to a simmer. Let it reduce for about 2-3 minutes.
  8. Step 8: Stir in the heavy cream and cook for an additional 2-3 minutes until the sauce thickens slightly. Adjust seasoning if needed!

Notes

Store the shrimp and mashed potatoes in separate airtight containers in the fridge for about 2-3 days. Reheat gently on the stove or in the microwave.
