- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a baking dish, drizzle olive oil and arrange the salmon fillets.
- Step 3: Season the salmon with salt and pepper to taste.
- Step 4: Spread the Boursin cheese evenly over the top of each salmon fillet.
- Step 5: Scatter the halved cherry tomatoes and fresh spinach around the salmon.
- Step 6: Drizzle lemon juice over the entire dish.
- Step 7: Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through.
- Step 8: Remove from the oven and garnish with chopped fresh parsley before serving.
