- Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Step 2: In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon. Set aside.
- Step 3: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Step 4: Beat in the eggs one at a time, then add the vanilla extract, mixing until well combined.
- Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Step 6: In a small bowl, combine the ½ cup of granulated sugar and 1 tablespoon of ground cinnamon for rolling.
- Step 7: Scoop tablespoon-sized amounts of dough, roll them into balls, then roll each ball in the cinnamon-sugar mixture.
- Step 8: Place the rolled dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Step 9: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Step 10: In a medium bowl, beat together the softened cream cheese and unsalted butter until smooth and creamy.
- Step 11: Gradually add the powdered sugar, mixing until fully incorporated.
- Step 12: Add the vanilla extract and ground cinnamon, mixing until well combined. If your frosting is too thick, add milk one tablespoon at a time until you reach the desired consistency.
- Step 13: Once the cookies are completely cooled, spread or pipe the cream cheese frosting on top of each cookie. Enjoy!
Notes
To keep your cookies fresh, store them in an airtight container at room temperature for up to a week. If you want to keep them longer, you can freeze the unfrosted cookies for up to three months. Just make sure to let them cool completely before freezing!
