  • 2 cups baby spinach
  • 1 cup cherry tomatoes halved
  • 4 large eggs
  • 1 whole avocado diced
  • 1 cup cooked brown rice or quinoa
  • 1 tbsp olive oil for sautéing
  • Salt and pepper

Method
 

  1. Step 1: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned and heated through, about 5-7 minutes.
