Ingredients
  

Meat
  • 1 lb ground beef optional note
  • 1 can kidney beans 15 ounces, drained and rinsed
  • 1 can corn 15 ounces, drained
  • 1 can cream of mushroom soup 10.5 ounces
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes fresh or canned
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • salt and pepper to taste
  • 1 package frozen tater tots 2.5 pounds

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C).
  2. Step 2: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  3. Step 3: Add the kidney beans, corn, cream of mushroom soup, diced tomatoes, garlic powder, onion powder, chili powder, salt, and pepper to the skillet. Stir to combine and heat through.
  4. Step 4: Transfer the beef mixture to a 9x13-inch baking dish and spread it evenly.
  5. Step 5: Arrange the frozen tater tots on top of the beef mixture in a single layer.
  6. Step 6: Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
  7. Step 7: Remove from the oven and sprinkle the shredded cheddar cheese on top. Return to the oven for an additional 5 minutes, or until the cheese is melted.
  8. Step 8: Let cool for a few minutes before serving. Enjoy.

Notes

Serve warm. Leftovers can be stored in the refrigerator for up to 3 days.
