Method
 

  1. Step 1: In a medium saucepan, combine the granulated sugar, cocoa powder, milk, and unsalted butter. Cook over medium heat, stirring constantly until the mixture comes to a rolling boil. Allow it to boil for 1 minute without stirring.
  2. Step 2: Remove the saucepan from heat. Stir in the peanut butter, vanilla extract, and a pinch of salt until the peanut butter is completely melted and the mixture is smooth.
  3. Step 3: Gradually mix in the quick-cooking oats, stirring until they are fully coated with the chocolate mixture.
  4. Step 4: Using a spoon or a cookie scoop, drop spoonfuls of the mixture onto a baking sheet lined with parchment paper. Flatten them slightly if desired.
  5. Step 5: Allow the cookies to cool at room temperature for about 30 minutes to set. You can also place them in the refrigerator to speed up the process.

Notes

These cookies are best enjoyed fresh but can be stored in an airtight container at room temperature for about a week. They also freeze well!
