  • 8 oz cream cheese softened
  • ½ cup powdered sugar

For the Cinnamon Sugar Topping
  • ¼ cup granulated sugar
  • 1 teaspoon cinnamon

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. This makes for an easy cleanup!
  2. Step 2: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract. In another bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Step 3: In a medium bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, and mix until well combined and creamy.
  4. Step 4: Scoop a tablespoon of cookie dough and flatten it slightly in your hand. Place about a teaspoon of the cheesecake filling in the center and fold the cookie dough around it, rolling it into a ball. Repeat this process with the remaining dough and filling.
