- Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. This makes for an easy cleanup!
- Step 2: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract. In another bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Step 3: In a medium bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, and mix until well combined and creamy.
- Step 4: Scoop a tablespoon of cookie dough and flatten it slightly in your hand. Place about a teaspoon of the cheesecake filling in the center and fold the cookie dough around it, rolling it into a ball. Repeat this process with the remaining dough and filling.
- Step 5: In a small bowl, mix together the granulated sugar and cinnamon. Roll each cookie ball in the cinnamon sugar mixture to coat.
- Step 6: Place the cookie balls on the prepared baking sheet, spacing them a few inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Step 7: Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
To keep these cookies fresh and tasty: Store them in an airtight container at room temperature for up to a week. You can also freeze the cookie dough balls before baking.
